Shakshuka style sausage stew

Today has been one of those really difficult days. Little one is poorly, I’m exhausted and Josh is tired out too. We’ve had a stressful couple of weeks and neither of us felt like cooking much but we wanted something that felt like comfort food. So of course I decided to create something.

I based this recipe on Shakshuka since it’s something we’ve discovered recently that we wanted to try making. But instead of putting eggs in it I added sausage slices.

I was really pleased with how this turned out, it was delicious and I will definitely make it again.

This recipe feeds 2/3 add more veg and it’ll go further easily. 

Stew recipe

Ingredients

  • 1 large onion
  • 2 cloves of garlic
  • 2 tablespoons of Olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon mixed herbs
  • 1 teaspoon Chilli flakes
  • 1 teaspoon parsley
  • 2 teaspoon cumin
  • 1 Tablespoon paprika
  • 1 Tablespoon of nutritional yeast
  • 1 bell pepper
  • 1 tin of tomatoes
  • 1/2 cup veg (peas, sweetcorn, carrots) chopped small.
  • Salt and pepper to taste
  • 3/4 sausages (I used Tesco plant chef)

Method

  1. Cook your sausages to go in the stew later, and prep onion and veg.
  2. Put your oil in the pan and add your onion, garlic and pepper. Cook them through until onion is translucent.
  3. Add spices and veg, stir together.
  4. Add tomato and simmer for five minutes.
  5. Add sausage and simmer for five minutes more.
  6. Add salt and pepper to taste.
  7. Best served with cheese.

This is likely to become a staple meal in our house. Even little one enjoyed it and it wasn’t too spicy, so it’s perfect for all of us. I hope you enjoy.
