Bear’s beautiful churry recipe

This is a delicious vegetable based meal with the spices of a chilli and a curry, which is where it got it’s name. There are a lot of spices you can put in this! The recipe was developed by my sibling Bear who wanted something cheap, easy and highly nutritious. It’s become a uni staple for them and it’s an amazing meal to make when your fridge is getting bare and you have veg to use up. It’s also huge so prepare to freeze some!

So long as you use the same spices you can use almost any veg. It’s a new experience every time, if you make it differently I would be excited to know how it went.

Recipe

Ingredients

  • 1 to 2 large onions
  • 1 tin of red kidney beans
  • 1 tin chickpeas
  • 1 tin of butter beans
  • 1 tin of chopped tomatoes
  • 1 tin of baked beans (optional)
  • 1 small tin to 1 big tin of sweetcorn
  • Spinach (optional)
  • Peas/carrots/small chopped veg of any sort
  • 1 Tablespoon Mixed herbs
  • 2 teaspoon Cumin
  • 2 teaspoon Smoked paprika
  • 1 teaspoon Chilli flakes
  • 1teaspoon Garlic powder/granules
  • Salt and pepper to taste
  • 1 teaspoon Basil (fresh or dried)
  • 2 teaspoon Turmaric
  • 1 teaspoon Gara masala
  • Splash of Soy sauce
  • 1 teaspoon of sugar (optional)
  • Cheese (optional)

Method

  1. First cook onions, once transparent, add soy sauce.
  2. Cook for a minute then put in all of the dried herbs and spices and cook for a few more minutes. When it starts sticking, add chopped tomatoes.
  3. Next, add all the beans then veg once beans are warmed through.
  4. Spinach and fresh basil comes next (basil goes in with other herbs and spices if dried), cook until wilted.
  5. Finally, taste and add some more of each herb and spice if necessary.
  6. Put cheese on top if you like, and serve by itself, with rice, with pasta, on toast, or whizzed up as a soup.

Again, it should make enough for loads of leftovers! If you want to make it smaller add just the one tin of mixed beans and a tin of tomatoes.
